<p>1. Call the customer before you leave the store. On the phone, confirm their order and give them an ETA. If you&#8217;re not sure exactly of the location of their house, you can find this out here. Customers appreciate this because they know when you&#8217;ll arrive and that their order will be correct. This will also save you time as you won&#8217;t have to scan addresses.</p>
<p>2. Establish a good rapport with the customer. Use their names, comment about their house, car, whatever. If they want to talk let them talk, be a good listener. If they don&#8217;t want to chat, get down to business. If they have kids, joke around with the kids, ask them about their favorite kinds of pizza. Pet the dog (and assure the customer you wash your hands).</p>
<p>3. Keep coin change in your car. Most customers don&#8217;t even ask for coins back, and the ones that do usually don&#8217;t want to wait for you do &#8216;dig it out&#8217; of your car.</p>
<p>4. Give back change in one dollar bills. Ones are so much easier to part with, and when you get a lot of them, they seem to have less value&#8230;so it&#8217;s easy to part with them. If you do have any fives, keep these hidden on the inside of your bank. A huge mistake to avoid is when the change is $5.45 is giving the customer back only a $5. You&#8217;ve put the customer in the awkward situation of either giving you a $5 tip or no tip at all (well, $0.45).</p>
<p>5. For credit card receipts, use a highlighter to indicate all fields: tip, total, and signature. Ask the customer to &#8216;fill out the form&#8217; rather than just sign it. Many customers don&#8217;t realize they can add a tip to their credit card order, but using a highlighter makes this pretty obvious.</p>

<p>Barcelona has many markets with extremely fresh produce and with the extensive range of self-catering accommodation in the city, such as tourist apartments, it0s great fun to pick up some local produce and make a meal in, or prepare a barbeque on your terrace. Gone are the days of worrying about properly cooked fish, or seafood which might disagree with you &#8211; Barcelona&#8217;s fishmongers are the happiest in recommending different ways to prepare your catch of the day, and personally, I have learned many techniques of different ways to prepare fish and seafood from many friendly fishmongers. The famous Boqueria market on the central Las Ramblas street is a great stop to view different types of seafood and fish, but the Barceloneta and Sant Antoni markets are equally central, stocking the same produce and are often less crowded. Whether it&#8217;s ingredients for Paella, a Peruvian cebiche or fresh sardines for the barbeque &#8211; head down to the markets early and stock up on the catch of the day.</p>
<p>If you prefer to be waited upon, then you&#8217;re spoilt for choice in Barcelona. With so many seafood restaurants to choose from, and every city guide book often choosing different ones, I&#8217;ll try and recommend a few of my own experiences and some of the un-missable spots, too.</p>
<p>The old fisherman&#8217;s quarters of La Barceloneta lie right next to the beach and those narrow streets have some of the oldest and most established restaurants serving the freshest fish and seafood to this day. So when the new red-brick building which now houses the Catalan History Museum was commissioned, there was to be space underneath for the select few restaurants from Barceloneta to choose their spot. In a nutshell, the best places in the old fisherman&#8217;s neighbourhood were given their choice of restaurant space. Now, since then, in my opinion, some of those restaurants have let their standards slide a little, given the fact that they will easily fill tables on their terraces on a summer&#8217;s day due to the prime location. This is all apart from one &#8211; El Merendero de la Mari &#8211; which has maintained the best standards since &#8220;Mari&#8221; used to make the broth for the Paella and those Mariner&#8217;s mussels. For me, they just have got everything right, from the waiters and the crockery and cutlery (sounds stupid, I know, and I&#8217;m no restaurant critic, but things like that stick in your mind!) to the wine and the speed of service.</p>
<p>Just along the way from El Merendero, and of a completely different ilk, is El Rey de la Gamba. Here it&#8217;s a much more modest place, with paper napkins, waiters who shout the orders back to the kitchen, and the like, but it&#8217;s always busy, and they have a great turnover of the fish, so it&#8217;s always fresh. The biggest reason for me including this place as well, is that the portions are huge! Often we have gone in a group of four and ordered a seafood platter and Paella for two &#8211; and had plenty of leftovers for a doggy bag, too!</p>

<p>An eatery running on a traditional concept would lose out to fast food outlets in terms of output and capacity. Cutting down the time diners have to wait at a restaurant would maximize on the profit, with the assumption that the restaurant is at full-house capacity during these peak hours.</p>
<p>Most restaurants running on the traditional concept, where food is prepared only upon an order, are shifting towards the fast food concept little by little. So to speak, the food on top of a restaurant&#8217;s menu would be prepared in advance even before the order is place, in order to hasten the overall process.</p>
<p>The most notable shift we can see is Starbucks. Traditionally, Starbucks would only prepare your drinks on the spot upon order. However, during peak hours, especially during breakfast, most of the more common drinks will be prior prepared in bulk.</p>
<p>Though a restaurant may not be classified as a fast food restaurant, the concept is slowly adopted at a wide scale to remain competitive.</p>

<p>By 997 the word Pizza appeared in Latin and by 16th century in Naples a flat bread was referred to as a pizza. The pizza was a baker tool to confine the temperature of the oven. It was given as a dish for poor people and was considered not as a kitchen recipe.</p>
<p>Before tomatoes were introduced to Italy a white sauce was used on the bread but with the introduction of tomatoes in the 16th century from South America, even though the first ones were poisonous, by the 17th century they were added to the dough bread and the base was stated and we have the beginning of the first pizza.</p>
<p>Mozzarella cheese was slowly becoming popular in Italy with the introduction of buffalo from India. Then in 1889 cheese was introduced onto the pizza and that is when the classic pizza was created.</p>
<p>In that same year a tavern owner called Don Raffaele Esposito created the first pizza using tomatoes, mozzarella cheese and basil, which was named after the current queen of Italy called Margherita Teresa Giovanni and that is the being of the Mozzarella pizza.</p>
<p>By the late 19th century when Italians started migrating to America they brought across with them the pizza. Soon after they started opening up simply groceries stores and inside that they were selling pizza. The first true pizza store was opened in around 1905 by a guy called Gennaro Lombardi which was situated in a area called little italy at 53 rd spring street in New York.</p>

<p>The most defining feature of a New York style pizza is its crust. While Chicago style and others have thicker crusts, the crust of an authentic New York style pizza is thin, crispy, and hand-tossed. The crust&#8217;s dough is high in gluten. It has been thought that the distinct flavor comes from the minerals in New York City&#8217;s water. Don&#8217;t worry that it&#8217;s tap water, New York has, reportedly, the best water in the country.</p>
<p>The crust is made into a pizza with a diameter or roughly 18 inches. There are generally 8 slices to a pizza, although other numbers are ok. These slices are wide, thin, and foldable. The individual pizzas traditionally have mozzarella and tomato sauce as their only toppings. This is not to say that pizzas are not available with more toppings, just that these are the traditional ones. The pizza is also supposed to be light on sauce.</p>
<p>This style of pizza is not exclusive to New York. It has spread across the northeast over the years although it originated in New York City&#8217;s Little Italy. In addition to being known as &#8220;New York Style&#8221; pizza, this thin crust pizza is frequently called Italian Pizza. It gets its name for being the style of pizza that is most frequently sold by pizza shops that are owned by Italian Americans. Greek Pizza is another option and so calling it Italian Pizza makes a difference.</p>
<p>Many pizzerias and chains that are not in the Northeast still call their pizzas New York Style. Despite their claims, there is some dispute about the authenticity of the claims. Pizza Hut and Sbarro, both nation-wide chains, both call their pizzas &#8220;New York Style;&#8221; however, most would agree this is a stretch.</p>
<p>The term &#8220;New York Pizza&#8221; is frequently mis-applied to generic American pizza. The problems with these pizzas can be that the crust is too thick or too thin. Another egregious error made when claiming a pizza is New York style is using mixed-cheese blends. These frequently include cheddar cheese in the mix which is, clearly, not part of the New York Style blend.</p>
<p>The first pizzeria in the United States was opened in 1905 by Gennaro Lomardi. His pizzeria was called Lombardi&#8217;s and it was located in Little Italy in Manhattan. As New Yorkers have moved, so has their pizza.</p>
